Now that autumn is here and the weather is cooling off, heat up your oven and make some homemade pizza. Try this recipe for Kale & Mushroom Pizza from Jessica Fisher of Good Cheap Eats and pair it with one of the following wines.
Kale & Mushroom Pizza Wine Pairing
This simple pizza combines the earthy flavors of mushrooms with kale (which is equally earthy as it is grassy, and peppery, and can be somewhat bitter), balanced out by sweet and acidic tomatoes and creamy mozzarella cheese. The key to this dish is that the sweet tomatoes and creamy cheese balance the bitter and earthy components in the kale and mushrooms. We’re looking for a wine that can meld well with all of these components.
We turn to Viognier.
Viognier (and Viognier blends) fit the bill well with their distinct floral, apricot, and often peach and citrus aromas, providing a fresh contrast to the earthy nature of mushrooms and kale, yet balancing the sweet tomatoes. Viognier, though not too acidic, does have enough acidity to round out the meal and provide some balance to cut through the creamy mozzarella cheese. The wines below, mostly Viognier or Viognier blends, will all provide different approaches to this varietal and are all great choices for this pizza.
Rhone Blend: Guigal Cotes du Rhone Blanc ~$13
Fresh with white flowers, apricot and white peach. Fruity and well rounded. A fresh, elegant, and bright pairing for the sauce-less pizza.
Rhone Blend: Perrin et Fils Reserve Cotes du Rhone Blanc ~$10
Crisp with some pear, apple, and pineapple. Fuller bodied with some spice to accompany the dry rub should you add it to the pizza.
Viognier: Cono Sur ~$9
Floral and fruity with apricot, peach, citrus, and a touch of spicy oak.
Viognier: Nord Sud ~$12
More floral notes here with some pear and apricot. Nicely textured and balanced acidity. Will go well to brighten up the mushrooms and balance out the sweet tomatoes.
Torrontes: Crios de Susana Balbo ~$15
Though not a Viognier, this wine is similar in flavor, body and style with flavors of peach, flowers, and citrus. You also get a bit of melon and honeydew on this wine with a nice medium body. Fruity, floral, dry, and a bit zesty.
